"How many authentic quotes from Epicurus have survived?"

In general, Diogenes Laertius' bookseries The Lives of the Philosophers is the primary source of Epicurus' teachings. None of the actual originals have survived, but Laertius copied them in verbatim. The Epicurean texts are in the tenth book, and contain the Authorized Doctrines, the Letters to Menoeceus, Herodotus, and Pythocles. These are the most important philosophical writings, but there are also other bits, like the last will and testament, and his last letter.

There is also a collection of Epicurean quotes called the Vatican Sayings (they were rediscovered in Vatican). These have much overlap with Laertius, so they are accepted as reliable sources too.

In 1887 Hermann Usener published a collection called the Epicurea, that contains fragments about Epicurus and Epicureans. Many of these are from unknown or hostiles sources, so care must be had when using them.
